Columbus chef featured nationally on ‘Today’
Local chef Cara Mangini has made a name for herself in print through her Vegetable Butcher cookbook, and in Columbus through her Little Eater restaurant and grocery stores at The North Market–now she’s getting some time in the national spotlight.
Her recipe, Eggplant & Mozzarella Stacks with Pesto & Balsamic Reduction, was just featured on today.com.
It’s a take on a classic caprese salad that adds eggplant and basil-walnut pesto to the mix, resulting in a sophisticated and beautiful final product.
