A passionate and committed leader, responsible for the overall operations of High Bank Distillery including: Sales generation; all aspects of P&L management, hiring, training and development of hourly staff and management; execution of safety / sanitation; high quality food preparation; high levels of hospitality and service; proactive and economical maintenance of the building, grounds and all equipment; communication and administration of all company policies and procedures. The General manager is responsible for these areas whether on or off premise.

Essential Functions and Responsibilities

  • Responsible for leading, inspiring and managing the Executive Chef: the Executive Chef is responsible for all culinary activities for the restaurant. The Exec. Chef will oversee all activity in the kitchen, hire and train back of house personnel, plan menus, oversee product purchasing, ensure high levels of cleanliness and sanitation in the kitchen and manage the culinary budget including achievement of food cost and labor targets.
  • Effectively lead and manage the entire team to ensure high levels of guest satisfaction, food quality, and profit maximization.
  • Effectively forecast, budget and plan sales daily, weekly, monthly, quarterly and annually.
  • Effectively forecast, budget, plan and schedule labor and food costs to optimize profitability.
  • The General Manager will meet with the President weekly to proactively review and continuously improve the following critical business metrics: Customer Satisfaction Metrics, Sales, Food Cost / Paper Cost / Beverage Cost, Labor Cost, Cash Deposit Log, Active Community involvement / local restaurant marketing

  • Develop, lead and manage effective cash handling and banking procedures and policies for hourly staff and management.
  • Develop, lead and manage sanitation, safety and security procedures. Including compliance with all health, OSHA, federal, state, local laws, and codes.
  • Hire and manage front of house management and staff. Onboarding and ongoing performance review process must be established at the opening and maintained on an ongoing 6-month basis.
  • Coordination of all training activities for the front of the house operations, including the identification and analysis of training needs and the design and implementation of programs required for opening of location and ongoing operations.
  • Perform other related duties as assigned

Supervisory Responsibility

This position manages the entire operation and is responsible for the performance management, development, promotion and recruitment of talented staff that aligns with High Bank Distillery core values. Every effort must be made to keep the business staffed at all times and fill vacant positions immediately with a high sense of urgency.

Required Education and Experience

  • 7 years of progressive experience in high-volume full-service restaurants or an equivalent combination of relevant education and/or experience.
  • Bachelor’s degree with major concentration in food service and hospitality management preferred.
  • Min 5 years of General Management supervisory experience preferred.
