CBC Restaurant dies, reincarnates as “evolved” concept under same ownership

CBC Restaurant as you know it is over but will be reincarnated by the same owner and operator.

Oxbow on Short is a chef-driven restaurant and bar soon to take over the space occupied by CBC restaurant at 525 Short St. in the Brewery District.

The restaurant will close August 31 for renovations and will reopen as Oxbow on Short at a yet-to-be-announced date.

The brewery space attached to the rear of the building will continue to be operated by Commonhouse Ales and the entities will remain separate.

“Some might call it a rebrand,” stated Rusty Scarberry, General Manager of Oxbow on Short, “but really, we’ve just evolved beyond the initial concept that emerged twenty-one years ago, and we want to bring Columbus something new and different.”

A collaboration beer called Oxbow Short Street Pils has been brewed and is now available on tap at CBC Restaurant.

According to a press release, the lunch menu will largely be the same as CBC Restaurant’s but Oxbow on Short will boast a more sharable and small-plate-centric dinner menu.

“The best way I can describe the food we want to make is to just say it’s fun and whimsical, but still chef-driven. For instance, we are working on this pickled watermelon with shishito pepper dish that’s very veggie forward,” said Scarberry. “Even though we are looking forward, we want to pay homage to where we’ve been, so when it comes to cheeseburgers, we really just want to give guests two juicy beef patties with cheese, a good bun and call it a day.”
