The line cook is responsible for preparing his or her station before the start of each service. This individual will be prepping food to include chopping vegetables, butchering meat and preparing sauces. Also, responsible for preparing the items requested by the chef. At the end of service , the line cook is responsible for cleaning and restocking their station.
The dishwasher is responsible for sorting and rinsing dishes, glasses and tableware and placing them in racks to send through the dish machine. Carry clean dishes to cook's line or storage areas. At the end of service break down the dishwashing area. Take trash to the dumpster.
