Hold the freaking phone, these pierogies look incrEDIBLE. Sophie’s Pierogi truck practices what they like to call “Gastrogi.” This of course is the culmination of two words: Gastronomy (the art or science of eating good food) and Pierogi (polish word for “filled dumpling”). These beautiful crafted potato-filled dough envelopes are cuddled up with things like carmelized onions, sour cream and sometimes even eggs.
