And last, but certainly not least, course three is your choice of Holjaldre de Crema (chocolate mousse filled cream puff; Oreo crumbs), Calabaza Confitada (candied butternut squash; walnut crumble, vanilla ice cream), or Crema (brûléed Catalan spiced custard; pineapple ring).
