Acclaimed chef Josh Dalton closing another Central Ohio restaurant
In the heart of Delaware, there’s a tiny little spot at 15 E. Winter St. that has served as a “test kitchen,” in a way, for the celebrated chef Josh Dalton restaurants.
First, the restaurant was Veritas, which then moved to Downtown Columbus. Then, it was Speck, which also moved to Downtown Columbus. Recently, it was COVE, and its final iteration is, and will be, Rosebud’s.
“After a lot of thought, I’ve decided it’s time to close Rosebud’s in Delaware. This space has been so much more than just a restaurant to me — it’s been a home for ideas, a place to take risks, and an incubator for dreams,” Dalton announced on Instagram.

Dalton had a big week of announcements—we learned that not only is he opening a Mediterranean restaurant in the former Milestone 229, but his 20 year old restaurant, 1808 (also in Delaware), will be closing. And now, Rosebud’s is too.
“I can’t begin to express how grateful I am for the support you’ve shown through each chapter,” he said. “Whether you came in once for dinner, worked a shift on the line, or followed along as we tried something new, you’ve been part of the story. The laughter, the late nights, the toasts, and even the growing pains—they’ve all meant the world to me.”
The last day to grab that legendary burger will be Saturday, October 11th, and they hope to see you stop in.
