After three years, anticipated Dublin-area brewery and restaurant announces opening date
Bridge’s End Brewing Co. has finally reached its official beginning.
After owner Bill Schirmer announced the concept in late 2021, Bridge’s End shared yesterday on social media that it plans to open on May 21 at 3 p.m. The brewery is located at 9320 Dublin Rd. in Shawnee Hills.
For Schirmer, a longtime Dublin resident and surgeon, the idea for a Dublin-area brewery came from his home-brewing history.

“I’ve been brewing beer since 1992, and I’ve saved every recipe I’ve ever made. I even have six taps of beer in my home,” he told 614Now in a 2021 interview.
After more than three years and several delays along the way, Bridge’s End has honed its offerings, and decided to focus primarily on craft lagers, as opposed to ales (similar to Columbus concept Gemut Biergarten). Former Watershed Distillery still operator Elliot Hamilton and former Wooly Pig and Combustion brewer Alex Lawrence will lead the Bridge’s End beer production. Bridge’s End plans to embrace lower-ABV offerings like Czech and German-style Pilsner, Helles, Dunkel, Kölsch, Berliner Weisse, and Belgian-style Ales, “and the occasional hoppy pale or IPA.” Is brewing system boasts a 2,200-barrel capacity.
Their menu is not publicly available yet, But Bridge’s End plans to offer a food menu complimenting the brewery’s beers, with a focus on pizzas, salads, sandwiches and starters.
“I know some people aren’t beer drinkers; I want them to come for the food,” Schirmer said in an interview last year.
