Hot new sandwich concept from Columbus restaurant veteran coming to North Market Downtown
A hot new sandwich shop is officially landing in the North Market Downtown.
According to a press release, Caroline’s Sandwiches, a sandwich concept created by former A&R Creative (The Crest, Fourth Street Taproom & Kitchen) chef Justin Wotring, will be holding a series of pop-ups that will operate Thursday-Sunday at the North Market Downtown. The pop-ups currently have “no set end date,” according to the North Market.

Caroline’s, which is named after Wotring’s late niece, offers approachable sandwiches that incorporate international cooking techniques Wotring learned from time in Lebanon, Spain, Morocco and more. Diners can grab options like the Mush Love, a shiitake, cremini, and enoki mushrooms sandwich served with truffle aioli, and Pig in the Weeds, a grilled pork shoulder sandwich topped with Black Cap hot sauce.
Caroline’s will be taking over the former COLO Burger Bar pop-up space, which has moved across the aisle and consolidated with COLO Market & Oyster Bar to become COLO Burger & Oyster Bar. Wotring will also operate the recently reopened North Market Butchery, which is located next to Caroline’s.
“Joining the historic North Market is such an honor for us. It’s exciting to be part of a community with so much history and energy around the local food scene. We are proud to showcase our sandwiches and share our passion with the people of Columbus,” Wotring said in a press release. “This spot is about showing up for your neighborhood, feeding folks like they’re your own, and keeping things real. It’s where comfort meets quality — and your crew knows your order by heart. Caroline’s is a vibe, a legacy, a damn good sandwich spot.”
