New sourdough pizza concept coming to Columbus offers community focus, culinary flair

Sourdough pizza is coming to Upper Arlington this month.

According to CMO David Hunegnaw, Sourdough Pizza Bros will open April 6 inside of Upper Arlington’s new Bob Crane Community Center, which will open to the public that same day. It’s located at 3200 Tremont Rd.

The concept is billed as a pop-up that’s part of Core Cafe’s (a health-focused bakery that will open a permanent location inside of the space) culinary incubator inside the new Community Center.

“Sourdough just hits differently,” said co-CEO Letha Pugh, who is also the founder of Core Cafe and Bake Me Happy. “It’s got depth, flavor and science on its side. We want to share that love with people who care about what they eat.”

Like Core Cafe, which will operate as a healthier bakery, Sourdough Bros is billed as a more health-conscious pizza option. It will use a 100 year-old sourdough starter that ferments for 36 hours. The menu of its Upper Arlington pop-up will include options with spicy pepperoni, garlic-sauteed spinach, a white sauce pizza with truffle oil, a hot honey pizza and more.

According to Hunegnaw, the Pizza Bros concept is built to scale (he noted several other Columbus locations are already in the works).

“Our goal is to take this brand and scale it using a franchise model,” he said. “Using that model, we plan to actually give away franchises to people in communities who are underserved.”
