Meet the new fried chicken sandwich concept that’s making waves
It’s hard to beat a good fried chicken sandwich, and a new Columbus pop-up is churning out some great ones.
Pigeon Mike’s, the brainchild three Columbus chefs in Paige Wotring, Martin Ezell and Po Cambo, is currently operating as a pop-up out of Three Bites Bakery.
“The concept was born out of a shared love of food and a desire to explore creative, unexpected ways to make really great fried chicken,” the trio told 614Now. “Each chef brings their own signature sandwich to the menu–Numbers One, Two, and Three—which have become fan favorites throughout the pop-ups.”

The chicken sandwich spot offers four core sandwiches on its menu, including:
Number One: Crispy fried chicken tossed in signature house-made barbecue sauce, topped with a dollop of habanero-pineapple jam and finished with coconut slaw, served on a toasted brioche bun.
Number Two: Crispy fried chicken glazed in a gochujang reduction, topped with kimchi pickles and house ramp ranch on a toasted brioche bun.
Number Three: Crispy fried chicken tossed in house seasoning, topped with Duke’s mayo and our house pink pickles, served on a toasted brioche bun.
Number Four: Crispy fried chicken tossed in a Cambodian dry seasoning, topped with a Kroeung mayo and spicy Cambodian papaya salad, served on a toasted brioche bun with a side of house chips.
Each sandwich is served with a side of Pigeon Mike’s seasoned, house-made chips.
Pigeon Mike’s is eyeing a brick and mortar home in the future, but in the meantime, you can find them serving sandwiches at Three Bites Bakery. Its next pop-up is on Jan. 11.
