Member of Auddino’s Italian Bakery family launching own restaurant featuring bread, pizza, gelato

A family member behind one of Columbus’ most storied bakeries–past or present–is cooking up something of his own.

Marco Auddino, the son of Auddino’s Italian Bakery owners Michele and Rosa Auddino, is branching out on his own in the form of Pegasus Bread Co.

“I grew up in the bakery business, my first toy was a dough ball,” he said with a laugh.

Pegasus, which has sold bread as a wholesale operation for just over six months, is opening a brick and mortar retail store. It will be located at 490 Commerce Dr. in Sunbury, and will hold its grand opening on Sept. 19.

Bread will be one of the cornerstones of the new storefront, with Pegasus offering a variety of artisan options, including mainstays like sub buns, round bread and ciabatta, and a handful of unique rotating specials, such as Everything Bagel Ciabatta, brioche bagels, and loaves with interesting additions like Calabrian peppers, hot sauce and and even (upon request) sardines.

”When I was at [Auddino’s Italian Bakery], I got a little bored with mass production, and I fell in love with making artisan bread,” Auddino said. He ran the production room of Auddino’s from 1997-2006, when he relocated to Florida, before returning to Ohio in 2014.

Bread won’ be the only thing patrons can find at Pegasus, either. Auddino plans to offer pizza and gelato, both of which will be made in-house, alongside wings, salads and more.

“I learned how to make [Gelato] while I was living in Florida, and we want to bring that to Sunbury,” Auddino said.
