Mobile pancake bar opens, offering breakfast treats across Central Ohio
When self-described foodie, Ashlyn Hubbard, discovered a mini pancake griddle, she saw an opportunity to create a new mobile business that pushes the boundaries of the breakfast classic.
Spending time at her partner’s cidery, Seek No Further in Granville, Hubbard saw a market for the pop-up as the cider bar only offered a few small snacks. The concept grew quickly as they created sweet and savory concoctions for guests to enjoy.
Little Jack’s Pancake Bar offers a menu for everyone, from a build-your-own option filled with classic pancake toppings to the more unconventional Savory Jacks topped with bacon and goat cheese crumbles.

The cart’s nostalgic design is inspired by Hubbard’s passion for vintage diners and her experiences at unique restaurants that offer flavor creations hard to forget. The cart design is meant to embody an old-school western pancake house, in hopes of guests longing for their sticky pancakes and unique menu.
The mobile Pancake Bar has only been in operation officially since early May. The goal is to become an event pop-up staple expanding beyond the cidery.
