Short North-born restaurant announces when Bridge Park location–and surprise new bar concept–will open
Fans of the Short North-born Bristol Republic received not just one, but two pieces of great news earlier today.
This morning, Bristol announced it will open the doors of its anticipated new Dublin location this June, although an exact date wasn’t shared. The Southern-style eatery–known for BBQ offerings like its 18-hour brisket and ribs–was originally opened at 1124 N. High St. in 2019, but closed last year to allow the eatery to move into its new home.
Bristol will be located at 4495 Bridge Park Ave., within Dublin’s Bridge Park development.

In addition to an opening timeline, the popular eatery shared the news that it plans to open a new bar concept alongside Bristol Republic inside the Bridge Park space. Billed as an “elevated cocktail lounge,” The Saddle Club will share space with Bristol at its new Dublin location.
While Bristol will feature the BBQ, Southern-style brunch and whiskey it made its name on, The Saddle Club will lean into “a more elevated, intimate environment within the space, centered around a high-end cocktail and whiskey program.” It will offer:
-A large whiskey selection and elevated cocktail program
-Live jazz Wednesday-Saturday
-DJs on Friday and Saturday evenings
-A more refined, lounge-style atmosphere
-Private event capabilities for up to 50 guests
“We’re taking everything that’s made Bristol what it is—great food, live music, and a welcoming atmosphere—and building on it,” Bristol Republic owner Brian Swanson said in a press release. “At the same time, we’re introducing something completely new with The Saddle Club. It gives us the ability to offer two different experiences in one space, depending on what you’re looking for.”
