Viral bagel concept coming to the Short North
A viral bagel concept is coming to the Short North soon—Popup Bagels is coming to town.
According to building permits, the bagel concept is moving in at 850 N. High St., an opening date has not yet been announced. The brand is known for their “grip, rip, and dip” way of serving. It’s just what it sounds like, they serve fresh hot fresh bagels that you rip and dip into a rotating selection of artisan cream cheese.

The East Coast-founded concept was started by Adam Goldberg, who picked up bagel making as a pandemic hobby. Initially, Goldberg was cooking bagels in his kitchen and handing them to friends through his backyard window.
According to their website, the concept promises “Fewer choices, better bagels. Simple menu. Exceptional product. We focus on the essence of the perfect bagel, a product so good it stands on its own. Paired with a rotating menu of epic schmears that change weekly, every choice earns its place.” Stay tuned for an opening announcement, and follow along here for updates.
