New possibilities for Pitabilities in Hilliard Market

Nicholas Youngblood

After 11 years of serving meals on wheels, local Mediterranean food truck chain Pitabilities opened its first brick-and-mortar location in Hilliard’s Center Street Market. Despite setbacks this year due to COVID-19, founder Jim Pasovich said the new location was a no-brainer thanks to the support of Hilliard and the market.

“I love the concept of being in a market, so that was the important thing to me,” said Pasovich. “Being able to work with the other vendors and everything really made a difference.”

The fast-casual pita wrap restaurant will largely imitate its food truck format, offering a variety of proteins and veggies to fill a flatbread, with additional sides and desserts available. Pitabilities’ four food trucks will remain in operation, and Pasovich said they began franchising them over the summer.

Between the trucks and the new permanent location, Pasovich said the business is looking to hire at least seven new team members plus additional drivers.

Pitabilities’ brick-and-mortar location will be open Monday from 11 a.m. to 7 p.m. and Wednesday through Sunday from 11 a.m. to 9 p.m., with hours expanding as new staff is hired. Job listings, catering, online ordering, and the food trucks’ schedules can be found on Pitabilities’ website.
