Popular pop-up plans brick-and-mortar location
Born out of pandemic-era creativity, Boxwood Biscuit Co. is slated to open this spring at 19 W. Russell St.
The founders behind the concept are Law Bird Bar owners Luke Pierce and Annie Williams Pierce and Chef Tyler Minnis of Angry Bear Kitchen and The Market IV. The trio initially started Boxwood Biscuit in August as a weekend brunch pop-up to boost cash flow, but popularity gave way to the need for a brick-and-mortar location.
Eats will include “Fresh & Flaky Biscuits” and fried chicken, and vegan versions are planned as well.
Williams Pierce said that while the hours aren’t set just yet, the trio plans to make Boxwood an all-day concept with breakfast, lunch, and dinner. She said they’re excited to continue working together to bring fun and delicious things to Columbus.

“It’s also pretty remarkable to continue to grow a brand (especially a restaurant) in these wonky, stressful, unprecedented COVID times,” she said.
Williams Pierce and her fellow Boxwood founders have a crowdfunding campaign underway to help move their new eatery to its permanent home. The Indigogo campaign has 36 days left, and has raised over $7,300 of a $40,000 goal.
