This food truck has a secret weapon for crispy chicken and fries

It was a great love for wings and fries that motivated John Ross and his wife to start the Purple Chicken food truck this past December.

“We have not been able to find the perfect crispy-yet-juicy wing and crispy-but-not-dry fry, and so we [decided] to make our own,” John Ross said. “Multiple iterations later, we are now ready to serve the greater Columbus region the perfect crispy wings and French fries.”

The secret? The couple brines their fries and wings overnight, which makes the wings super tender and juicy, while adding the perfect amount of salt to the meat and fries, Ross said.

“The fries and wings come out of the fryer perfectly crispy and salty every time,” he said.

The crispy wings come with house-made sauces that are served on the side, as well as house-made blue cheese and ranch dips. The sauce is served on the side, Ross said, so the wings avoid becoming soggy from sitting in the sauce. You can choose from Mango Habanero, Smokey BBQ, Carolina Gold, Korean BBQ, and Spicy Buffalo.

“Although there is an extensive list of sauces available and still many yet to be invented,  I chose the flavors that I liked most and thought would be most popular, as well as flavors that friends and family said they enjoyed,” Ross said.
