Authentic Memphis BBQ concept now open in Columbus Food Hall
A real Memphis-style barbecue spot has opened its doors for business.
Yesterday, Carnivores BBQ held its grand opening in the Columbus Food Hall, a collection of commercial ghost kitchens located at 1282 Essex Ave.
The concept, which is owned and operated by Memphis native Joe Collins (who was raised in the Dayton area), features authentic Memphis-style barbecue. Collins said the regional style is all about is signature dry rub, which can feature up to 40 different spices in some cases.

“Texas has a heat-and-sweet rub, and Kansas City barbecue is known for its sticky ribs, for barbecue sauce; but in Memphis it’s all about the Southern rub,” he said. “It’s all about the flavor of the meat for me, not so much the sauce.”
Carnivores BBQ is currently offering its signature baby back ribs and a deboned rib sandwich, with brisket likely to join them on the menu soon. According to Collins, the new eatery’s fries are also one of its flagship offerings.
“Our fries are twice-fried in duck fat and the flavor is incredible,” he said. “You could take them on a road trip to New England and they would still be crispy when you get there.”
Carnivores BBQ is offering pickup and delivery Thursday-Saturday, from noon-10 p.m.
