Cameron Mitchell Restaurants announces opening date of new Dublin restaurant

Jack McLaughlin

In just over a month, Cameron Mitchell Restaurants will  officially open the doors of a new Dublin eatery.

According to a Cameron Mitchell Restaurants representative, Valentina’s, a new Italian concept, will officially open its doors on May 30.

The Dublin eatery was inspired by multi-generational winery owner Valentina Abbona, who operates the more than 100 year-old Marchese di Barolo winery in northern Italy. Inspiration for the name came when Cameron Mitchell Restaurants traveled to the winery in 2018 for the group’s 25th anniversary.

“We want everyone who enters Valentina’s to feel as if they are visiting a quant countryside home in Italy,” said David Miller, president of Cameron Mitchell Restaurants, in a press release. “This concept holds a special place in our hearts, bringing back fond memories of our 25th anniversary trip. We are creating a cozy and an immersive dining experience that will truly transport guests.”

The new 6,200 square-foot eatery is located at 4595 Bridge Park Ave., in Dublin’s Bridge Park development.

The restaurant group has also opened a hiring office to recruit employees for the new concept, which is located at 6265 Riverside Dr. in Dublin. Valentina’s wil create 110 new jobs, including servers, bartenders, hosts, server assistants, bakers, line cooks and dishwashers.
