New “dive bar, but bougie” concept from star Columbus chef officially opens its doors
It’s the final word uttered by the protagonist of Citizen Kane, and now it should be one of the first spots on your list of new Columbus restaurants to try.
Rosebud’s has officially open its doors.
Created by Josh Dalton—the standout chef behind popular Columbus concepts like Speck, an Italian Eatery and Veritas—Rosebud’s is located at 15 E. Winter St. in Delaware.

The Winter Street space serves as a “culinary incubator” for Dalton’s restaurants, and was the original home of Speck and Veritas before both eateries relocated to Downtown Columbus. Cove, a Seafood Joint, previously occupied the space before closing earlier this year.
Billed as “a dive bar but bougie,” Rosebud’s offers a variety of riffs on classic cocktails, and an eclectic food menu, with everything from confit wings and caviar to grilled cheese, a Cajun-Creole play on a hot dog, lobster rolls and burgers.
The new concept is open Wednesday-Saturday, 5-10 p.m.
