Popular food truck opening first-ever Columbus brick and mortar

Alongside the addition of a new fast-casual Middle Eastern eatery opening for February, the East Market has another new vendor preparing to join its ranks.

Fork in Nigeria, self-described as “the most popular African food truck in the USA,” will be taking over the East Market’s rotating kitchen space on March 1. The space is currently operated by Buck City Sammies.

The East Market location will be Fork in Nigeria’s first-ever brick and mortar home in Columbus. The concept also operates a restaurant of the same name in Detroit.

According to co-owner Dr. Joanne Mapis, Fork in Nigeria is already searching for a standalone restaurant space, and it plans to use its East Market tenure as a bridge to a permanent brick and mortar home. Currently, the eatery is scheduled to operate the East Market space through the month of May.

To streamline food prep and service, Fork in Nigeria plans to offer a more concise menu at its East Market location.

“We’ll be offering only two or three meats, and a lot of the more traditional items that take longer to make won’t be on the menu. All of our key items will be there, though: the fufu, the jollof rice and definitely some wings,” Mapis said.
