Something new & buzzworthy is brewing at Parable…and nope, it’s not coffee
Parable is already known for being a popular coffee shop and prominent space to hangout at, but it’s about to level up (and we didn’t even know that was possible). On Wednesday, May 17th, they acquired a liquor license, and according to co-owner Ben Willis, their newest concept of a coffee shop by day, cocktail and natural wine bar by night, “…is going to be great – one of the best places to hangout in Columbus.”
Guests can soon look forward to a thoughtfully curated selection of biodynamic, natural wines alongside specialty cocktails, all of which are going to be accessible and palatable. Most importantly for Ben, Jeffrey, and all of their teammates, the drinks are going to be made by people who are appreciated, compensated fairly, and want to be there.

Parable’s unwavering commitment to their employees and guests contributes heavily to their success. If it seems like “everybody” in Columbus is there, well, they are. It’s not just a place to be seen, but somewhere guests and the baristas feel seen. “When you take away the veil of tipping culture and can just focus on making the best experience and the best times with guests, it’s easy to feel cool and appreciated, which ultimately, makes my teammates and our guests want to be here. I want my teammates to work in a safe, fun place, where they know they’re protected and respected,” Ben says. So maybe the secret ingredient to their magical Flower Power latte really is love?
Ben explains that venturing into the wine & cocktail realm was a strategic decision, but really, they’re ready to evolve. “Parable is an employee centric business, and the more opportunities you can give employees, the better. For every waking minute that we’re in here, we might as well maximize the time. When we make more money, we can pay our employees more.” Offering wine and cocktails will also help elevate the special events they’ve been hosting lately.
Other details, like a set menu and new hours, remain undisclosed for now, but Ben assures us that espresso martinis will be on the table – ethically made, of course.
