Star Columbus chef closing one restaurant concept, but opening another

The days are numbered for Cove, a Seafood Joint, but a brand-new concept is already in the works to replace it.

The eatery opened last summer inside of standout chef Josh Dalton’s “restaurant incubator” space. Located at 15 E. Winter St. in Delaware, the building has been used by Dalton as a test kitchen for a variety of his concepts.

While both Veritas and Speck Italian Eatery, the predecessors to Cove at the Winter Street space, were given full-time homes in Downtown Columbus, it does not appear that will be the case with Cove.

In a post made to its Instagram account yesterday, Cove announced that it plans to close in several weeks, although an exact date wasn’t given. In response to a comment on the post asking if Cove would join Speck and Veritas in Columbus, the eatery responded, “Nope she will be gone forever!”

Even though the restaurant—which focused on seafood with a menu inspired by Dalton’s travels—will close soon, Cove did announce replacement concept is on the way, although no details about the new concept were shared.
