Dig into these succulent shrimp dishes from El Vaquero

While you may already know that El Vaquero,  the popular group of Columbus Mexican eateries, offers top-tier soups in addition to a veritable rainbow of flavor-charged margaritas, the eatery is now doubling down on their shrimp offerings as well.

And if you’re hungry–or plan to be hungry anytime soon–that’s good news for you.

To start, diners can dig into El Vaquero’s Queso Fundido appetizer, which serves up seven grilled shrimp alongside a hearty helping of onions, mushrooms and poblano peppers, all covered with melted cheese.

If you’re looking for a shrimp dish that falls on the lighter side, the eatery’s Ensalada Tropical is the way to go. The salad pairs seven grilled shrimp with romaine, gourmet greens, pineapple, mango, black corn salsa, feta cheese, tomato and your choice of dressing.

And if it’s something on the heartier side you’re after, El Vaquero has you covered here as well. The eatery offers shrimp tacos, burritos, enchiladas and fajitas (served with mushrooms, bell peppers, tomatoes, onions, guacamole salad, sour cream, pico de gallo, and tortillas), in addition to a handful of speciality shrimp dishes. 

These include the Camarones a La Diabla, sautéed shrimp on hot sauce, served with Mexican rice, and the Camarones Rancheros, sautéed shrimp in creamy ranchero sauce,  served with brown Mexican rice or refried beans and tortillas. Dig in!
