Columbus craft brewery using AI, genetic engineering to brew opening next month in former Platform Brewing space

Columbus’ soon-to-be newest brewery is already poised as one of its most unique, and now it’s set to open early next month.

The Species X Beer Project–a new, science-driven craft brewery created by Beau Warren, a former Virginia Tech Football player plus barrel program and lab manager at Aslan Brewing Co.–will kick off its soft launch in late January, and will open its doors to the public on Feb. 8.

The new concept, which plans to employ a variety of cutting-edge and science-based technologies in the world of craft brewing, will make its home inside the former Platform Brewing space, which is located at 408 N. 6th St.

“With aspirations to bring truly novel, category-defining innovation back to brewing, we’ve completely reimagined the former Platform Brewing Co. space into a taproom that doubles as our research and development hub for brewing experimentation,” Species X Beer Project Marketing Director Timothy Parrott told 614Now. “Harnessing the wild and the engineered; the human and the artificial; the very old and the yet-to-be discovered, we’re experimenting with AI, data modeling, wild spore fermentation, wild-caught yeast fermentation, genetic engineering and more to define the future of sustainable brewing.”

According to an interview last year with Warren, this seemingly sci-fi approach to brewing will include the manipulation of biological ingredients found in beer, mainly its yeast. The brewery will lean into the genetic engineering, referred to by Warren as “forced evolution,” of yeast species to achieve unique flavor profiles. 

Warren also plans to incorporate and cultivate yeast strains that are sometimes hundreds of years old, AI technology to help select recipes and more.

The brewery will also feature an in-house kitchen, serving deli sandwiches and pizzas on homemade focaccia bread.
