New food concept, Big Shrimp Energy, opens today

Big Shrimp Energy has arrived in central Ohio.

The concept, a new food truck from restaurant veteran Ryan Mecum, will hold its grand opening tomorrow at Mother Stewart’s, an Irish bar which is located in Springfield Ohio, although Mecum said the eatery plans to travel across central Ohio.

The new food truck aims to create a simplified and customer-friendly version of the popular seafood boil-style eateries that have become popular in recent years. Often emulating communal Cajun and Creole seafood cookouts, these eateries combine vegetables, seafood and seasoning together into a single dish that’s often served strewn across a table.

In addition to offering “the flavor of seafood boils without the mess,” Big Shrimp Energy plans to cut down on the wait times some experience at these eateries.

“We’re trying to take the best parts of the seafood boil and give it to people in a bowl,” Mecum said. “If you come to a seafood boil in a suit, you’re going to have a bad day. We’re trying to give them the flavor in a quick-serve setting, where we can turn up the pace and give them a bowl, regardless of what they’re wearing.”

The new food truck plans to offer two menu items for now, including the Shrimp Bowl, which features corn, potatoes, andouille sausage and Argentinian red shrimp, tossed in butter and seasoned. The eatery’s other item, the Bang Bang Shrimp, is made of breaded and fried shrimp tossed in creamy, sweet and spicy Bang Bang Sauce, alongside sweet potato tots.
