The Pizza Box, which will operate as a food trailer, will open for the first time at AoH in mid to late-October.

According to Seventh Son Brewing Co. (which operates AoH as a sister brewery and taproom) owner Collin Castore, while the Seventh Son team is passionate about AoH’s Brewery District neighborhood, there is currently “a dearth of casual and late night food options” in the area.

Working with TJ Gibbs from Paulie Gee’s, The Pizza Box has perfected their dough recipe, leading to a crust that’s described as “neo-Neapolitan,” which will be similar to the popular style, only with “more structure and less flop.” The concept will offer 6-8 seasonal options for their 10-inch pizzas that will utilize as many fresh and local ingredients as possible, in addition to salads, appetizers and desserts.

The concept is currently hiring and training.

“This has been blast diving into Columbus pizza styles, techniques, culture and history and we can’t wait to share a slice or two of what we have learned with Columbus,” Castore said.
