Come out and celebrate National Spicy Guacamole Day this Thursday, November 14 at any of your local El Vaquero restaurants! When you’re eating the home-made guacamole from El Vaquero, you’re eating history that dates back to the 1500s when the Aztec empire created this iconic dip, using the same recipe El Vaquero uses to this day. Every morning, their skilled “Guacamolegists” make fresh guacamole, ensuring that every bowl is absolutely perfect.
“Our guacamole is all about freshness and authenticity. We select the finest avocados combined with freshly squeezed lime juice, chopped cilantro and a pinch of salt,” said El Vaquero co-founders Efrain Quezada and Fernando Morales. “It’s a simple recipe that honors tradition with each bite, showcasing the quality and care we put into every dish.” You can you make it as spicy as you’d like on request.
While their spicy guacamole is good enough to eat by the bowl-full, we suggest pairing it with the Quesadilla Mexicana entree, featuring a grilled flour tortilla filled to the brim with refried beans and cheese, then stuffed with beef tips, shredded chicken or pork carnitas. Wash it all down with their signature smokey mezcal margarita – we’d give you all the ingredients to that, but it’s a secret.
