Macedonian pastry outfit moves into new commercial kitchen space

One of the city’s most unique food vendors is making a pair of big moves.

Zelnik: Nontraditional Macedonian, the one-man operation selling scratch made Zelnik—Macedonian pastries that pack egg, cheeses, and a variety of different proteins and accoutrements into a rich, flaky crust—has recently moved into a downtown commercial kitchen, operating out of Pizza Rustica.

Formerly delivery-only, Zelnik is now able to offer customers the option to pick up their savory pastries at Pizza Rustica, located at 17 S. High St. Orders can now be placed through the eatery’s new website, here.

This month, the tried and true Baba’s Original and Spiced Beef Zelniks are both for sale, in addition to a must-try new offering, Barbacoa.

And more than affording them a pickup location, their new commercial space allows Zelnik to become significantly more efficient at preparing food. And this, for all you hungry Columbus residents out there, means more of the food stuff for us.

“What it all comes down to, in a nutshell, is capacity,” said Zelnik owner Ryan Miller. “There are a lot of reasons why this lets me produce more, but a big one is just about space. I can’t prep 50 of these in (just any) kitchen, and once they are prepped, you need a lot of oven space. This is just much more ideal for Zelnik in terms of production.”

Miller noted that his move-in has gone smoothly on a personal level as well.

“The folks there have been super kind and helpful, I can’t say enough good about them,” he said.

And that’s not the only thing Zelnik has in store for us.

Starting next week, Miller plans to launch the first phase of a nationwide delivery program. This means you’ll be able to ship some of the best new food in Columbus to anywhere in the US. Zelnik will begin shipping to California, Ohio, and New York, with plans to expand shipping to Illinois, Indiana, Michigan, Florida, and New Jersey soon after, with the rest of the country scheduled for August.

“We’ve had demand nationally from day one, so this is big for us,” he said. “Plus, we’ve done a test run shipping to California on dry ice, and everything turned out great. I figure if we can send Zelnik there easily, we can send them anywhere.”
