Defined by its abundance of evenly distributed marbling, wagyu has become more accessible in mainstream dining in recent years. Even better, Fireproof Restaurant gives you a variety of ways to enjoy wagyu – even for those with a more youthful appetite.
Wagyu Dumplings: Fireproof is quite literal when they exclaim they are a “from scratch” kitchen – even the dumpling wrappers are made in-house. These delicate square wrappers are filled with minced wagyu, ginger, onions, celery, and garlic, then pan-seared and topped with vibrant mustard greens. They don’t get lazy with the sauce either; Fireproof prepares their house-made ponzu sauce to be served alongside. These poppable dumplings are delicious, easily shared, and an amusing way to enjoy wagyu.

Wagyu Sliders: There are many ways to approach creating a slider. Most restaurants go more traditional, but Fireproof truly understands the assignment of creating a flavor profile that enhances the wagyu. Starting with a seasoned and seared wagyu patty, Fireproof layers on mild Muenster cheese, and a dollop of blueberry bacon jam. The house-made jam incorporates blueberry compote, bits of bacon, and the flavor driver-bacon fat. The sweet and savory compote with salty bits of bacon oozes into the wagyu with each bite. These sliders are full of flavor and whimsy!
14oz Wagyu NY Strip: If you are looking for a traditional wagyu steak dinner that leaves your date swooning, the Wagyu NY Strip is a must. The steak arrives pre-cut and shingled so you can easily identify it is cooked to your exact specification. Each bite melts in your mouth and is enhanced by a light dusting of flaky finishing salt. This steak is sumptuous and mouthwatering, and at some point, you will have to negotiate with yourself to put the fork down. This is a steak you will think about weeks later.
Tip: Ask to add on the house-made Bordelaise or chimichurri – both incredibly luscious
