After delays, this new lager-focused brewery and restaurant is coming to the Dublin area

Despite a significant setback, Bridge’s End Brewing is still coming to the Dublin area.

The craft brewery and restaurant, which was announced more than two year ago, in December of 2021, has finally broken ground, following a series of hurdles.

According to owner and longtime Dublin resident Bill Schirmer, Bridge’s End Brewing is currently eyeing an early fall opening.

“Fergusson Construction is the construction company, and they’ve adopted a pretty aggressive timeframe,” Schirmer said of the project, which is a new build. “They say about eight months, but I think realistically we’re looking to open in September.”

Bridge’s End will be located at 9320 Dublin Rd., in Shawnee Hills.

Schirmer said that, due to cost overruns, the building will be slightly smaller than originally estimated, but he said the space will still include a full brewery, taproom and restaurant space, in addition to a patio.

The brewery will focus on lagers (as opposed to ales), and will utilize lager-specific gear. He noted that, while many breweries put out lagers, without speciality lagering tanks, these beers often aren’t as dialed in as they possibly can be.

Additionally, Bridge’s End will offer a full-service restaurant focusing on small plates and shareables.

“The plan is to serve small plates, kind of tapas style, with pizza and and other things to pair well with the beer,” Schirmer said. “I know some people aren’t beer drinkers; I want them to come for the food.”
