Columbus concept known for bringing savory Macedonian pastries to central Ohio announces closure

Nearly four years after bringing commercial Zelnik (and a concept named after the Macedonian pastries) to Columbus, owner Ryan Miller will be closing up shop.

Miller announced in a social media post over the weekend that Zelnik plans to cease retail operations after its tenure at the Dublin Market runs out in August.

Zelnik, a Macedonian pastry created by combining phyllo dough with cheeses, meats that’s typically complimented with a roasted ajvarski pepper sauce, have always served as an expression of Miller’s Macedonian ancestry. The Ohio University alum learned how to make the dish from his great-grandmother (via his father), and began selling them to Columbus. in October of 2020.

He told 614Now that he continues to be “very grateful for all of the support from the Columbus community,” and that his decision to shutter the concept comes from his “desire to work normal hours and travel more during warmer months, which coincide with market season.”

Zelnik will continue selling its namesake pastries at the Dublin Market at Bridge Park every second Saturday through August.

Even though the concept itself will be gone, Miller said he remains just as passionate about the pastries, and about cooking as a form of self-expression.

“I’m still very passionate about my mission to bring Macedonian food to the masses and raise awareness about Macedonian history,” he said. “I will still engage in social media and share my Macedonian inspired creations on the Zelnik social media channels.”
