Owner of Veritas & Speck opening another Downtown restaurant
The corner of High & Gay St. has seen quite a transformation in the past decade. Veritas, The Citizen’s Trust, Speck, Hank’s Seafood, Chouette…and now, Rosalita is joining the team.
Chef Josh Dalton, one of the most respected chefs in town and founder of Speck & Veritas, is opening his third concept on that corner. “It’s going to be as authentic as we can get,” said Dalton.
Rosalita, Dalton’s new Mexican-inspired restaurant, should be opening next fall if all goes well, inside the historic Madison’s and White-Haines building at 72-80 N. High St. The restaurant is an ode to his travels to Mexico City, Oaxaca, Guadalajara, and the Yucatan Peninsula, respecting the subtle elegance and refined touches you’d find in an authentic, upscale Mexican restaurant.

“I know I can’t cook as good as a Mexican grandmother,” emphasized Dalton, “but we’re giving the culture and the cuisine the respect it deserves, with our town touch.”
Dalton said they’re finding the best ingredients possible for this new concept. Expect traditional cuisines from cities around the entire country, plus a cocktail menu spotlighting tequila and mezcal.
“The last 7 years has been tough on Downtown restaurants,” Dalton shared. “But Jeff Edwards [of Edwards Cos.] is building a legacy and has a passion for Downtown.” Edwards has been helping revitalize the Downtown community for the past decade, and Dalton is thrilled to be part of it all.
