Owners of Coast Wine House opening whimsical new eatery in Historic Dublin
In the heart of Historic Dublin at 91 S. High St., a long-awaited culinary gem is set to open its doors Thursday, July 18, at 5 PM. Gene’s, founded by Dustin Snow, owner of the beloved Coast Wine House next door, promises not just a meal but an unforgettable dining experience crafted with passion and precision.
“We can’t wait to welcome guests in to share with them what we’ve been dreaming up over the last year,” Snow shared eagerly with 614Now. “It’s been a labor of love, fueled by the invaluable feedback we received from our guests at Coast Wine House. They’ve been asking for more food, and now with Chef Bobby at the helm, we can deliver just that.”
Gene’s menu is designed to be small, intentional, and seasonal, complemented by a wine program that champions pioneers and classic producers dedicated to sustainability and quality. “We’re also excited to offer a full bar featuring some impeccable craft cocktails,” Snow added.

When asked about his personal favorite dish on the menu, Snow hesitated briefly before enthusing about the Fried Squash Blossoms. “They’re a perfect little snack to start off your meal—full of flavor, crispy on the outside, and soft and creamy inside,” he described. “They represent the type of food guests will find here: hyper-seasonal and spotlighting local produce whenever possible.”
Inspired by coastal taverns, traditional French bistros, and contemporary farm-to-table venues, Gene’s aims to create a sophisticated yet inviting atmosphere. “We wanted it to feel new yet familiar, sophisticated yet unfussy,” Snow explained. “Every ingredient and bottle will tell a story. It’s a place for making memories—from intimate date nights to catching up with close friends, to celebrating over countless bottles of wine and dishes shared.”
For those eager to experience Gene’s, rest assured that bar and patio seats will be available on a first come, first served basis if reservations are hard to come by. Additionally, signing up for emails on Gene’s website ensures you’ll be among the first to know when new reservation opportunities open up.
