New Polaris restaurant to close for rebranding
Ashtyn’s Seafood House has temporarily closed to rebrand.
The eatery, which is located at 1047 Polaris Pkwy., initially opened on Dec. 22 last year.
According to owner Ashtyn Chen, who operates one of the state’s only saltwater shrimp farms, the original concept behind Ashtyn’s was a fine dining and farm to table seafood restaurant.

And while many aspects of the original restaurant, including its name, will remain the same, Chen said he will take several months to close, regroup and rebrand.
“We opened a few months ago, and it didn’t work as well as we wanted it to,” he said. “Honestly, I’m a farmer, so we brought on another partner with experience to help things out.”
One of the largest changes, in addition to major interior grades, will be a reduction of Ashtyn’s prices.
“We’ll still focus on the seafood we raise, but think more fast casual,” Chen said. “Think farm to table Bubba Gump’s, that’s why we’re aiming for.”
