Polaris restaurant that opened last December announces permanent closure

Ashtyn’s Seafood House, the unique Polaris concept developed by one of the state’s only saltwater shrimp farmers, Ashtyn Chen, has closed for good.

The eatery initially opened last December, before undergoing a temporary closure to renovate and search for a partner to help operate the restaurant. This closure, which was temporary at the time, occurred on April 20.

“We’ve met many interested candidates along the way, but could not find one that would help us operate the restaurant to where it needs to be, as a farmer-owned restaurant using 100% US sourced ingredients, including the seafood from our family farm here in Ohio,” a statement posted to the eatery’s social media accounts reads.

According to the statement Multiple factors, including a difficult labor market and Chen’s desire to concentrate on growing his seafood farm, led to the closure.

The statement also noted the desire to recreate Ashtyn’s Seafood House at some point in the future, although specific details were not provided.
