Popular ramen concept bought by new owners and isn’t closing after all

With only a handful of excellent ramen spots scattered around central Ohio, we don’t like seeing any of them have to close their doors, especially a popular spot that’s made a name for itself at its booth at Echo Spirits Distillery.

When Red Rabbit Ramen announced the owners, Mike and Terry Ramsey, were planning on relocating to the Pacific Northwest after being offered a job in Seattle, loyal ramen fans were understandably really bummed out.

The Ramsey’s, who said leaving their customers would be the hardest part about this move, were hoping that someone would be interested in buying the brand and keeping Red Rabbit Ramen alive.

Well, Columbus, our prayers have been answered! Two new entrepreneurs, Xavy & Blaine, have decided to buy Red Rabbit Ramen. “They saw Red Rabbit Ramen’s call for help and decided it was a business they wanted to get into,” said Joe Bidinger, co-founder of Echo Spirits. “This is going to be a new adventure for them.”

Bidinger said that initially, the name and concept will all stay exactly the same, still catering to what we all know and love about Red Rabbit Ramen. “I’m sure over time they’ll start to put their own spin on things,” he remarked.

As of now, the Red Rabbit Ramen cart at Echo Spirits is still closed, with no specific reopening dates locked down just yet. “We’re anticipating that their opening will be at least a few weeks away, and in all likelihood, they’ll start out only operating on Fridays and Saturdays before expanding.”

In the meantime, there will be a variety of other food trucks at Echo Spirits to pair with your incredible cocktails there! You can check out that food truck schedule here.

Shoutout to Xavy and Blaine for keeping our ramen dreams afloat.
