The Indian street food you didn’t know you needed

At the end of July, CloudKitchens, the ghost kitchen center at 1282 Essex Ave., gained not one, but three different Indian street food concepts.

Husband-and-wife team Rakesh and Krishna Rathod run Bombay Kitchen Columbus, Apna Dhaba Columbus, and Rajbhog Cafe Columbus, franchises that operate under the larger umbrella of Rajbhog Cafe.

“Each one has their specialty,” Krishna said.

Bombay Kitchen specializes in Indian street food, and it’s heavy on the meat.

“We’re targeting pure, non-vegetarian people,” Krishna said.

Rajbhog, however, specializes in vegetarian street food, while Apna Dhaba also features vegetarian Punjabi-style street food.

Krishna said she and her husband opted for cloud kitchens because of the popularity of the model in this post-COVID world. The design also means less labor and investment, and an overall lower budget than the traditional restaurant model.
