Local seafood farmer launches farm-to-table Polaris restaurant

In Central Ohio, when restaurants claim farm-to-table ethics, it’s normally referring to produce, or proteins like beef, chicken, and pork. 

But for Ashtyn’s Seafood House—a new restaurant coming to 1047 Polaris Pkwy.next month—this process revolves largely around seafood.

The eatery is the brainchild of Ashtyn Chen, the CEO of Ocean’s Friend Aquaculture. Based in Pataskala, the business is one of only two Ohio-based aquaculture farms producing saltwater shrimp.

“With our reputation as fish farmers, our connections with the agricultural community worldwide, and our 39 years experience in the culinary trade, Ashtyn’s Seafood House is a culmination of all that we hold close to heart,” the restaurant’s website reads.

Ashtyn’s Seafood House is slated to open next month.

In his new Polaris restaurant, Chen will use his own shrimp—in addition to seafood from a variety of other loca farmers, such as Millcreek Perch Farm, which raises yellow perch in Marysville—to feed local diners. The eatery claims it will be 100 percent domestically-sourced.

The menu, which will serve both lunch and dinner, features oysters, blue crab, a variety of Cajun-inspired seafood boils with shrimp, plus saltwater and freshwater fish. It will offer non-seafood options like steal and pork chops, plus a variety of craft cocktails.
