North Market Downtown’s newest vendor is a treat

The Pastry Factory is coming to the North Market Downtown this spring, according to a release announcing the newest merchant. 

The outfit is owned by Allyson Blackwell, who grew up baking and eventually went on to a career in the restaurant industry with roles including sous chef, pastry chef, and head baker. 

“I’m so excited I can’t stop smiling,” Blackwell said. “I’m very grateful for where I am at, I’m delighted about where I’m going, and I think the best is yet to come.”

Blackwell founded The Pastry Factory in 2012 as a part-time, home-based bakery. But after she lost her job as a cafe manager, she took on The Pastry Factory full-time. The outfit produces gourmet desserts and pastries, such as gourmet cupcakes, tarts, French pastries, cookies, cookie sandwiches, brownies, pies, and cakes. She features a rotating flavor offering as well as seasonal and holiday items. She proves gluten-free, vegan, sugar-free, dairy-free, soy-free, and nut-free options too. 

The Pastry Factory will be located between Stauf’s Coffee Roasters and the Green Olive Company, across from Barrel & Boar.
